These cookies are a perfect sweet treat, but not too bad for you!!
I constantly try to avoid consuming and using any processed sugar in my recipes. In this recipe I use coconut sugar! Coconut sugar is a much healthier alternative to processed sugar. It contains many minerals including iron, zinc, calcium, and potassium and has a lower glycemic index! Hope you enjoy!
-1/2 cup of peanut butter
-1/2 cup of vegan butter
-1/2 cup of coconut sugar
-1 teaspoon of vanilla
-1 1/4 cup of organic unbleached flour
-1/2 teaspoon of baking powder and baking soda
-1/2 teaspoon of sea salt
Pre heat the oven to 350 degrees Fahrenheit. Beat the peanut butter, vegan butter, sugar, and vanilla in a bowl. In a separate bowl whisk together the dry ingredients. Add the dry ingredients into the wet ingredients. Cook for about 10 minutes and you have delicious cookies ready to eat!
