Sushi might just be a constant craving of mine. I Sushi might just be a constant craving of mine. I mean I just never get to the point where I eat too much of it so I can never get sick of it. For better or for worse... 🍱

Was going to actually make sushi but had to sushi rice or seaweed soooo went with a bowl. 

🍱cook your rice
🍱for the gigs you got two options.. #1 go to the store and buy it. #2 slice ginger super thin and add to a sauce pan with honey, water, vinegar and bring to a boil. Let simmer and add the ginger and liquid to a jar. Let sit in fridge till your done with the rest. 
🍱 onto the tofu. Slice into cubes (like I said I was first going to makes sushi instead so went with strips but I would say cubes are the way to go but you do you) fry on each side in a pan with some oil. Add teriyaki sauce and cook till the sauce has thickened a bit. 
🍱To make your own sauce mix maple syrup, soy sauce, oil, water, ginger and garlic and heat in a pot till just boiling. Take just a little out and mix in a little bit of arrowroot powder. Add in the arrowroot powder sauce back to the rest of the sauce, mix together and turn off heat. 
🍱finally the butternut tempura. Cut butternut squash and boil in water till almost soft. Take out of water. Coat in a arrowroot (or cornstarch), flour, salt, water mixture. You want this mixture to be pretty liquid but stick to the squash. So I tell you from experience that you need your oil to be hot before adding the coated squash so it doesn’t stick. So when oil is hot fry until fired. 
🍱assemble in a bowl with any other toppings and sauces. I added the teriyaki sauce from the tofu as well as hot mayo (can be made by mixing mayo and Sriracha hot sauce).

Last year I was able harvest and actually get around to drying some herbs to stock up for winter. Calendula, chamomile, elderflower, and mugwort being the big ones. 

I hope to step up my game this year. Producing more to harvest and getting around to processing.

Posted on the story the first day I made it. If you saw that you remember me not really knowing what it is lol. Kinda a dirty chocolate turmeric latte (optional in the “dirty”). I put coffee in it the first day, but since then found it didn’t really need it unless this is your way of getting coffee in the morning 👌

Thinking about it a great drink for night time as well! Take out the coffee 😂

I never really measure soooo the amount is very rough and you are welcome to work it around what you like :) 

✨Milk of choice- I typically do almond because that’s what we have on hand (you can pour it into your cup/mug before pouring into pot to know how much you want)
✨I really like @peakandvalleyco adaptogenic beauty blend- it has adaptogens, turmeric & black pepper, as well as much more. If you don’t have this totally fine just do: 
- a spoonful turmeric powder 
- dash black pepper 
- optional: adaptogens of choice & cordyceps 
✨spoonful of coconut oil 
✨a few spoonfuls of cocoa powder 
✨spoonful of sweetener - I like maple syrup or honey 
✨ big dash of cinnamon 
✨dash of cayenne 
✨small dash of nutmeg 
✨optional: as much coffee as you would like 

Add everything to a pot until coconut oil is melted and it is hot enough for you. Make sure to stir so nothing burns at the bottom. Add it to a blander and blend real quick to whip the coconut oil and powders with the milk real well! Enjoy 😉 ✨

Crazy that just by mixing together some flour and Crazy that just by mixing together some flour and water you can make magic!... aka bread 🤪

When working with the microorganisms all around us to make our food rise it takes a little more time. More time than it would if we used a package of yeast from the store. 

This day in age we have come to a point of the quicker and easier the better, especially when it comes to food. 

I do understand the desire and convenience of “fast food.” Though with this transition into the fast food movement we lose more and more of the culture and knowledge we had. The culture of where ingredients come from and why we use them. The knowledge of how to cook and take care of ourselves. 

Sometimes the slower process is the better one in the long run :) 

p.s- the baguette recipe is by @theclevercarrot ! Her book is what I go to 90% of the time when it comes to sourdough 😂I added some roasted garlic and Rosemary to the recipe 🙌

If we eat food from all over the world are we eati If we eat food from all over the world are we eating seasonally? 

For example: kale is in season on the east coast right now, being a hearty green in the colder season. Yet when we go to the grocery store we are gonna find kale from California. 

Is it still better to eat seasonally when we aren’t eating local? Are we even eating seasonally if the food isn’t from where we are? 

We are so divided from our food. It is so hard to know what the best thing to do is. 

Thoughts?!? :) 

Side note: I had been craving this salad for a little while now and there were things in the kitchen that needed to be used sooner than later. On top of being delicious I also made it for the following benefits:
• kimchi: I used the rest of the kimchi I had with the juice because I needed a gut health boost. Feeding the good bacteria in the gut. 
• fire cider: some that I made early this winter. I added this for a vinaigrette because it’s delicious as well as helps boost the immune system. 
• kale, brussels sprouts, lemon: all in season at this time. 

✨recipe: roast Brussels sprouts in the oven with some oil (avocado, olive, or coconut) and seasonings. I also like to add some soy sauce or maple syrup (or both) for a more savory or more sweet option. Once soft put on broil for a few minutes to get crispy. Chop your kale and cabbage and massage with your (washed and clean!) hands with some more oil, salt, and lemon juice. Add in all your other toppings. I added sautéed mushrooms and onions. Mix together with a vinegar of choice (I did fire cider!!). I didn’t have any but quinoa would have been really nice in this salad. Enjoy! :)

Spring rolls!!! Really fun and (for the most part Spring rolls!!!

Really fun and (for the most part) easy to make... once you master rolling them 😅

It is really up to you what you choose to put in them. For these you can see in the first picture all the veggies I did. Along with...

Miso ginger tofu:
• slice tofu into long strips. 
• mix together 1 part miso and 1 part hot water until miso is dissolved. Next add finely chopped fresh ginger (you can use powder but I like it fresh) as well as fresh garlic. 
• after letting marinate for a little while fry in a pan with some oil. 

To wrap your spring rolls it’s also pretty much up to you 😂 mess around with it to see how you like them. I will say as a pointer that if you want them to look pretty put the nice stuff down first. If I am making them for other I will place herbs and edible flowers down first, next some veggies, noodles, and more veggies. Again it’s really up to you. 

Finally to make the peanut sauce to dip:

To start mix together equal parts nut butter (I like peanut or sunflower for nut free), soy sauce (or liquid aminos), water, optional hot sauce. Season to taste by adding any other seasonings such as garlic powder, ginger, pepper, etc.

Getting movement into my daily routine has been on my new year resolution for many years. Not just doing house work and running around, though that is good to keep the movement going, I am talking about a time where you can focus in on yourself. Have I been doing it for many years consistently now🤦🏻‍♀️ no. 

This year I am making it a point! I feel so much better when I have had movement in my body at least once a day. A time to gain strength, tune in, and just be in the moment. 

I am someone who will workout but I can never do it consistently because it’s not my happy place haha. Yes I feel GREAT after but I can never get my self to start. With yoga you are stretching and you have options to move slower and deeper or faster and more intense. Not that you can’t do that in a workout, but yoga is what allows me to make it a point that what I am doing is FOR ME! 

I admire the people who find a routine that works for them. May it be yoga, running, hiking, working out, swimming, walking, etc. all wonderful forms of exercise. The best exercise for you is something that you feel good about doing and that you are able to get into while doing it. Something that has the ability to draw you into the moment and you can just take a moment to focus on yourself! 

This year I encourage you to find the movement that works for you. What form of exercise allows you to slow down and really practice self awareness and self care?!

Curried vegetables!! Perfect on a cold winter day, Curried vegetables!! Perfect on a cold winter day, this cruciferous dish tastes and feels so so good! Cruciferous vegetables like broccoli, cauliflower, and kale have essential vitamins and minerals, as well as healing properties for the gut. Curry spices include turmeric, cumin, coriander, cardamom, clove, and others! These spices warm the body, delivering healing properties to the body, including anti-inflammatory benefits. Swap out vegetables for this dish and add your favorite spices as well. I caramelized an onion with some grape seed oil, added garlic, and @mountainroseherbs ‘s Garam Masala Spice Blend, then added in 2 heads of broccoli and a handful of kale. I included the broccoli stems in the dish because they contain many of the broccoli’s nutrients! I added additional turmeric, garlic powder, onion powder, coconut aminos, @redrootco ‘s garlic and honey ACV, and black pepper. Finally, I topped with a little vegan cheese! Taste as you go along and add in spices that the dish needs, have fun with it! Have a great week.

💫Kabocha and chickpea curry:

I used the leftover squash from roasting it but you could just cube it and add to the pan with some water till soft. In a medium pot add onion, ginger, and garlic with some oil. Place a lid on top and cook on medium heat til soft. Add your cooked squash, chickpeas, and kale to the pot. Cook for a few more minutes. Add in some coconut milk, little water (depending on how high fat the coconut milk was), and seasonings of choice. Let simmer till it is the desired consistency. 

If you are having a bowl of curry on top of rice I would suggest keeping it on the more liquid side, if you would like to do taco style let the water simmer out more. I put rice, curry, avocado, cilantro, and hot sauce on my tacos 🤪

Another kabocha squash recipe: Roasted garlic and Another kabocha squash recipe: Roasted garlic and Kabocha soup! (insert squash emoji)🧄

Now if you have been following long enough you know that my soup recipes are: cut, roast, blend, season. I mean soups are just so up to your personal preference that it’s hard for me to give you very specific step by step instructions and exact measurements. 

Recipe:
☀️cut squash in half and roast at 375 degrees Fahrenheit till you can stick a fork through it
☀️roast your garlic by either wrapped the whole thing in foil of smashing the cloves to take off the skin and put in a oven safe bowl and cover with oil that can stand high heat
☀️when both cooked take out of oven and put the flesh of the squash and garlic cloves in a blender
☀️now I like to add coconut milk (the think one from the can) to make it creamy. If you don’t like the taste of coconut you can just do water but it won’t be as creamy. So you can you half coconut and half water which is what I usually do
☀️once blended you can add more seasonings of your choice. I also added some kale at the end while it was being warmed in the pot
☀️I like to top my soup with homemade croutons (to make just cut bread and put in a pan with some oil and salt till crispy) 

Kinda tastes like a deconstructed grilled cheese 🤷🏻‍♀️😂

Kabocha squash recipe #1: Buddha bowl 🥬 🍠 🧄 ☀️ 🍚 🌾 

What’s a Buddha bowl? Well I have come to the conclusion that’s it’s pretty much anything you want. Starting with a grain on the bottom (which could be quinoa,  rice, brown rice, etc.) and veggies. 

For this bowl I made some rice and cut the squash into slices to roast. Flipped the squash after it cooked for about 5-7 minutes at 375. I left the skin on because it’s easier and you can eat it, but it is a little harder on the digestive track haha. I also roasted some garlic (so yes I put a clove of garlic on my rice). I also made some fried tofu by adding dry spices (salt, pepper, garlic powder, nutritional yeast) and frying in oil till golden in each side. Side note we recently found SUPER FIRM tofu (like that’s what it’s called) and would definitely suggest getting that one at some point in your life to try! Lastly I steamed some kale by adding it to a pan with some water and a lid. Just to cook a little but keep that vibrant green and more nutrients. 

I also made a sauce (because it needed sOmeTHinG). To that I added liquid aminos (or soy sauce), maple syrup, apple cider vinegar, hot sauce, and sesame seeds (you gonna have to play around with the rations of what you like). Now that I think about it it would probably be REALLY good if you blended those ingredients with the roasted garlic 👌

You got a few options for cooking them:

1. You can make patacones which are made with green plantains. To do so peel and cut plantain into slices. Fry for a few minutes on each side in oil. Next you can use a tortilla press (or a cup) to smash them. Finally fry a second time till golden brown! 

2. What you see in the picture are monduros, which is using the very ripe plantains. You want them to be a bit squishy before you cook them. Again peel and cut into slices. Fry in oil (my favorite is coconut). It’s gonna take a little longer because you are not double frying these ones. Fry until that have that caramelized edge 🤤

For a late breakfast the other day I had (two bowl For a late breakfast the other day I had (two bowls of) Cheerios, a bagel (with cream cheese AND butter), as well as a juice. 

When I share that I only had a juice for breakfast I’m not lying or trying to hide the fact that I eat other things. Some days I really only had a juice other days I could have a whole bunch of things for breakfast. 

I wanted to write this post to share that what we post is not EVERYTHING we eat, or what you should be eating. That is definitely not the case. We are not perfect and everyone’s bodies need different things. We are not trying to hide things we eat behind the screen by any means. There are multiple reasons why we might not share everything including: 

🌸 This isn’t a recipe - a bagel with cheese and butter isn’t a recipe, which is what we like to share with you guys. We like to share our creations that we enjoy such as the juice I made. I’m not hiding the cereal because I don’t want you to know I ate something processed. I just figure you know how to make it and might not have tried the combo I came up with for the juice. 
🌸 All of our bodies are different- Sometimes I crave a bagel everyday, sometimes my body needs something light, sometimes I want the bagel but my body needs the juice. Not because I say to my self it’s healthier but because I know my body will not feel good after a bagel for the fourth day in a row. I’m gonna say it again ALL OUR BODIES ARE DIFFERENT. What food we share we share for you to be creative and try yourself to enjoy. They are not gonna be for everyone. We are not sharing to change what you eat we are sharing to inspire you! 
🌸 I may have the same breakfast, and that’s ok- sometimes I go a week and all I want are carbs every morning. Another week I might be on a smoothie kick and have the same smoothie everyday that I already shared. Again I’m not keeping my breakfasts hidden I just figured you seeing the same thing can get old. My body doesn’t want the same thing everyday. 

I wanted to get across on this post that we are not perfect and we are not trying to hide. We want to be transparent in the fact that everyone is different!

Past new years I always had a list of resolutions... this year I didn’t make one (yes partly out of not having time). Mostly because I wanna leave this year up for interpretation 🤷🏻‍♀️

I went to @mountainmysticcompany and got a black obsidian bracelet for opportunity, leaving my doors wide open for a new year full of new beginnings. 

Wishing everyone a much better year than the last!
